We freeze some turkey meat for sandwiches and soup,
but in my opinion, this is never as good as the unfrozen. It is fine for sandwiches with heavy dressing (mayo, walnuts
and raisins) and also for soup, but there is a better way.
On Thanksgiving day, make LOTS of gravy. As much
as you can. If you end up with lumps, so what? The taste of your homemade gravy (even with lumps) is FAR
superior to anything you will find in a store. After everyone is done picking at the turkey, cut some turkey into small
pieces. Add the turkey to the gravy and stir it up. Place in ziploc type storage bags and then place these bags
into ziploc type freezer bags. Freeze for later.
If you find you have made too much gravy, add the gravy to
your turkey stock.
Reheat in a double boiler. Roast some winter vegetables,
or mash some potatoes and you have a delicious, very quick, healthy meal.
