Skier's Popcorn

For this recipe, I use a hot air popper in order to save time and calories.  I tripple the recipe for my WES skiers and boarders.   I have had some success substituting the corn syrup for 3 T sugar, 1 1/2 T water and a pinch of cream of tartar.  This does not give me reliable results in a large batch, but works fairly well in a small (single) batch or substituting some of the corn syrup in the larger batch.

3/4 cup packed brown sugar
1/4 cup butter
3 tablespoons corn syrup
1/4 teaspoon salt
1/4 teaspoon baking soda
1/4 teaspoon vanilla
8 cups popped popcorn
1 cup peanuts (optional)
 
Combine the brown sugar, butter, corn syrup, and salt over low heat untill the butter is all melted.  Cook without stirring for 3 minutes.  Add the baking soda and vanilla and stir until the mixture becomes fluffy, stir in the peanuts.  Pour onto the popcorn and mix until evenly coated.  Bake 15 minutes at 300 degrees, stirring a few times.
